Pancake Cupcakes


Banana Chocolate Chip Pancake Cupcakes

On a whim I decided to make these yummy little morsels. They were really easy to make, and bake time was about 12 minutes. I think I saw a similar recipe on Pinterest, but by the time I went back to find it, I couldn't find the link to the original recipe.


What you need:

-box of pancake mix 
-ingredients needed for pancakes
-chocolate chips
-one banana
-brown sugar 
-ground cinnamon 
-powdered sugar or frosting

 So here is my version:

1.Preheat oven at 350. For the pancake mix I cheated and used a complete pancake mix, so I only needed to add water. Basically you would just prepare mix by the box, or use your homemade recipe if you have one. 

2.Then just add desired amount of milk chocolate chips, I used nestle brand and added about 1/2 a cup.

3. I then chopped up one banana into tiny pieces, you can add more if you really like bananas, but one was just fine.

3. Grab a good ole cupcake pan and spray with non-stick spray. Fill each cupcake about 2/3 full.

4. Next add some banana to the top of each one, kind of pressing them into the batter.

5. Top with a sprinkle of brown sugar and cinnamon and pop them in the oven! I let mine bake for about 12 minutes, but everyone's oven is a little different. You can do the touch test if your not sure. Just touch the top and if it's bouncy it's done. If you use the toothpick method, Remember the banana will be gooey. when all else fails pull them out when they are a golden brown. 

*tip- when removing from cupcake pan it's easier to loosen sides first.

Once they are cooled sprinkle some powdered sugar or top with some vanilla frosting and enjoy!
