Homemade Honey Smacks

What you need:
- puffed wheat cereal  
- honey ( I used local honey)
- sea salt
- non-stick cookie sheet 
- foil 

This was so easy! I try to make as much food homemade as I possibly can. With so many foods filled with GMO's and chemicals it's important to take part in making your own food at home. This was a short cut though. I didn't puff my own wheat, but I did buy All Natural puffed wheat for this recipe. I try to purchase natural or organic. I also look for products that have little or no salt, same idea with sugar too. If you're looking for gluten free I also have some gluten free cupcakes that I have shared, you can find them here and here. I love that you can find gluten free brands everywhere now. This little recipe is not gluten free, but very yummy.

All you have to do is spread the cereal as one layer over the foil. (We use the foil for easy clean up!) Drizzle honey all over. Sprinkle a little salt and pop it in the oven at 350 degrees for about 6 minutes, and you're done! 

After I took out the cereal, I let cool for about 10 minutes, and then I scooped it into a cereal container. It tastes just like Honey Smacks, except it's a much more healthier version. Especially because I used local honey, which is good for you in so many ways, especially with allergy season on it's way! 

I know as a mom, buying cereal at the grocery store can be very frustrating, especially when your trying to get healthy cereal. Your kids want the ones with the bright packages and the most sugar. If they already like Honey smacks then they will love this recipe. It's a great way to avoid all the unnecessary chemicals, and sugars.

Some days you're amazing, and other days you just want to hide from the world. I have been having a week like that. I start out thinking : Yes! today is going to be great....and then BAM! The rest of the world says: no, no you're not my dear. I know it was probably because of the full moon, but now I'm just trying to feel better. I've actually been able to spend some time writing my book. I love being able to create a world, and just live in it for the moment. I forget how much of an imagination I have. I have also been very inspired by some of the crazy dreams I have been having lately. I hope I can be published one day. Anyway, I hope everyone is having a great week so far!

Banana Chocolate Chip Pancake Cupcakes

On a whim I decided to make these yummy little morsels. They were really easy to make, and bake time was about 12 minutes. I think I saw a similar recipe on Pinterest, but by the time I went back to find it, I couldn't find the link to the original recipe.

What you need:

-box of pancake mix 
-ingredients needed for pancakes
-chocolate chips
-one banana
-brown sugar 
-ground cinnamon 
-powdered sugar or frosting

 So here is my version:

1.Preheat oven at 350. For the pancake mix I cheated and used a complete pancake mix, so I only needed to add water. Basically you would just prepare mix by the box, or use your homemade recipe if you have one. 

2.Then just add desired amount of milk chocolate chips, I used nestle brand and added about 1/2 a cup.

3. I then chopped up one banana into tiny pieces, you can add more if you really like bananas, but one was just fine.

3. Grab a good ole cupcake pan and spray with non-stick spray. Fill each cupcake about 2/3 full.

4. Next add some banana to the top of each one, kind of pressing them into the batter.

5. Top with a sprinkle of brown sugar and cinnamon and pop them in the oven! I let mine bake for about 12 minutes, but everyone's oven is a little different. You can do the touch test if your not sure. Just touch the top and if it's bouncy it's done. If you use the toothpick method, Remember the banana will be gooey. when all else fails pull them out when they are a golden brown. 

*tip- when removing from cupcake pan it's easier to loosen sides first.

Once they are cooled sprinkle some powdered sugar or top with some vanilla frosting and enjoy!

First Up...The Ones That Sparkle

All my Twilight books sit on my top shelf nest to LOTR. I actually have duplicate sets for reading.

My wife got me these dolls last Christmas...which are displayed on my book shelf.

Okay, before you start judging me, or start saying they aren't real vampires, let me just give you a little background in my knowledge of Vampire literature. I have read almost every well known Vampire book from Bram Stoker's Dracula to Anne Rice's Interview With a Vampire and Lestat and so on. I've pretty much seen all the movies. Even the original Bram Stoker's Dracula. I even took a college course called : Vampires in literature. So when it comes to vampires I am a total nerd! 

On that note, When my wife and I went to the midnight showing of Breaking Dawn Pt. 1, I won all the trivia contests! They asked questions from all the different Vampire movies and books. There seriously was no beating me! As for my love of Twilight, and honestly all creepy creatures of the night, let me explain.
At first, you couldn't catch me even pondering the thought of picking up a Twilight book to read. I thought it was stupid. Then one day, after Twilight was released in theaters, a girl at work wouldn't stop talking about how awesome the book was, and how the movie brought the characters to life! I thought okay lets give it a try. So I picked up the book on my day off....and finished it three days later...and I was hooked! 

One of the main reasons is because Stephanie Meyer and I have very similar writing styles. Two, The love story was very human. Of course it had that sense of obsession, which was expected, we are talking about vampires, but she also gave her human character a sense of belonging. As the books went on, she builds on the bonds of family, whether blood related or not. She gives examples of trust and loyalty. She also exhibits true love and the strong motherly instinct for her daughter. The love for her daughter really reigned me in, because I know I would do anything for my children and family.

I know so many people out there were like: it's stupid, their love wasn't healthy!
What part about VAMPIRE did you not read? Not to mention it's fiction.

Hump Day Rants

I decided that I don't do enough writing on my little blog. I thought Wednesdays would be a good day to just write about anything and everything that is on my mind. Luckily there isn't too much on my mind as of late, so I guess we can start with a list, lets try this out as a list of the top 5 things that have been on my mind. Now remember I am the queen of a.d.d. so most of these things are probably not related at all. I don't plan on ever listing things that would be, it's just not my style. So here we go....

1. I love all the blogs that push for self love and to not hate on the fat or skinny.

My issue is I am neither fat nor skinny. I am in that "in between" where I wear a large at the skinny girl stores (sometimes extra large) or I'm an extra small at a plus size store. I feel like I can't win. I don't feel skinny, but people look at me like I'm crazy if I try to say I'm fat. It's a really strange predicament for me. I feel overweight, but I don't. It's a little confusing. I've pretty much just decided to work out a couple days a week and see where it takes me. I really don't mind being curvy.

2. Facebook.

Need I say more? Don't we all think that it has gotten a little out of hand? I literally had to delete a ton of people because I couldn't stand all the drama. Reign it in! Some days I wish there would be a zombie apocalypse...then we could just weed out all the weakest links in real life..who is with me?!

3. Fast Food...

Okay, I have to confess, I am one of those moms that hates fast food. In fact I would shove healthy, organic farm fresh food down my throat (and my kids') in a heart beat, but why does Sonic have to have the best shakes I've ever tasted?! And don't get me started on their cheddar poppers!!!

4. Snooki.

Okay I know the Jersey Shore has been over for a while now, but hey I live on the Jersey Shore now! I was obsessed with the show, mind you I never watch reality tv, but that show was my guilty pleasure. So I follow Snooki on Instagram, twitter, and Facebook. I would be her BFF if I could! I think her son is so adorable! I also freaked out when I saw she was at Seaside, because I only live like 25 minutes from there. But I stayed home, I'm sure she has a bunch of crazy ass people stalking her. So yea, you could call me fan.

5. The mean. The rude, and the stupid.

As a mother, I have been doing my duty as a human raiser. Raising my children to be polite, educated, a little witty and always kind. Is that hard? Yes it is sometimes, but I stick to my morals and do the best I can. My issue is why hasn't the rest of society? I have worked in the public for the last 17 years of my life, mostly retail. I'm as polite as they come, yet some people can just be down right rude, mean and stupid. Come on people, really? Is it because we're to spoiled here in America? You tell me.

Okay tell me your not drooling over these!?! The one thing they all have in common is the use of lemon or lime in each recipe. I'm definitely going to make a batch of cupcakes like one of these. I'm really leaning towards the strawberry lemonade. I've had a similar cupcake like that once and it was really yummy! Anyway, I'm keeping this one short and sweet!

Geeky Confessions #2 Harry Potter

I have been a Potter fanatic from the very beginning! The fandom that has been built around these magical books will live forever. I absolutely love everything I've posted here, and every time I see anything that is Harry Potter related I have to have it. I'm still building my collection, and I also have a lineup of HP inspired tattoos that I will be getting.

I love how you can still find such cute items all over the internet, and in stores. I own a time turner, which is also going to be one of my tattoos. I love Hermione , but I would have to say that one of my most favorite characters is Luna Lovegood....
She reminds me a lot of myself, and I love that she really doesn't care what people think, but is still very sweet. I love her character and how she is always there for Harry. I was sad to see this series end. I spent all of my 20's watching each movie as they were released, and getting to share them with my children was awesome, though I feel like I was definitely the bigger fan! I never originally finished reading all the books. I wanted to wait until they were all released. I hate starting a series when an author hasn't completed it. It's heart wrenching! I know they have been out for years now, but I think I'm finally ready to take that plunge. If you know what it's like to be a fan of something, you know how hard it is to jump into a series, fall in love with characters, watch them die, and then have no idea what to do with yourself when it's all over. I've done this with the movies and I know the last few books are heart breaking! All in all, I think I'm ready.

In June my wife and I went to Philly for our wedding anniversary. I have so many pictures from that trip, and I have been so crazy with work and everything, that I haven't had time to post any pictures! So now I'm going to be back tracking a little, so I can get some of our pictures up here. All these pictures were taken on South St. It is such a cute area! Full of old buildings, and there is art everywhere! We had such a great time walking around and looking at everything. I love living so close to Philly!

Wow!! I took a whole month off from blogging! I miss my sweet little blog and I promise I am back to stay. I have to say I haven't really disappeared, I'm always on Pinterest, and Tumblr. I think only because it's so easy to re-pin things, and re-blog pictures and quotes. My absence though was mostly because I have been going through a lot of emotional moments. I literally had to step back and closely examine everything that has been going on for the last year. I have to say not everything in my personal life has been unicorns and rainbows, so I really needed to step up to plate and make some huge decisions. We all go through these moments, whether or not we want to admit it, and my marriage really needed some TLC. I literally said to my self : pull up your big girl panties, cupcake! And make some changes! 

First things first, my personal Facebook is now very private. I am only "friends" with family or close friends that I have known for years. Nothing personal for anyone I un-friended, but I really needed to clean it up. I've also went off the radar, and I'm keeping all communication with anyone to a minimum. Texting all the time can really ruin "real life" interactions. I feel like our society has become out of control when it comes to texting. I literally come home and hide my phone from myself. I decided that I need to be here in the moment. I also want to set an example for my kids.

As for my marriage, I feel like I have gotten my best friend back. I hate to admit it, but we lost it for a little while. Things got pretty bad, and at the moment when I thought we couldn't get anything back, the universe literally threw us back into each others arms. We are back to being "that couple" that is just sickening to be around...and I love it! She is my best friend, and the love of my life...always. I feel like we are even stronger than before, and this makes my life feel even more complete.

I'm so excited for this month because I have so much to share with all of you! I hope I can also throw in a few giveaways too! ....I totally forgot to talk about this outfit! HA! Vintage sweater over a summer dress...I totally love it!
